Easy Oatmeal ... The Healthy Way
As the weather gets chilly, I love some nice hot oatmeal (o.k., o.k ... with a bit of brown sugar) to get my morning started. But the instant oatmeals offered in grocery stores are so loaded with sodium and other stuff, that I wonder what the true nutritional value is! The recipe below may not be "instant," but it is not very time consuming and does not require a messy pot or microwave.
1/2 C. 1-Minute Oatmeal
1 TBSP Raisins (optional)
Chopped Walnuts/Pecans (optional)
1/2 tsp. Brown Sugar (optional)
- Put Quick/1-Minute Oatmeal into a large mug
- Top with Raisins, if desired
- Pour in enough boiling water to cover the Oatmeal and Raisins
- Let sit for 5 minutes
- Add Nuts, Brown Sugar, and Milk as desired to taste.
Today, October 23, happens to be the feast of San Juan Capistrano. Seems like a nice day to share the song, When the Swallows Come Back to Capistrano ... even though they (the swallows) traditionally return the the California mission on March 19.

(But they don't get as much swallow activity.)
